Lemon Garlic Asparagus

Lemon Garlic Asparagus* Ingredients: 1 bunch asparagus washed and 2 tablespoons R1 approved oil** minced garlic or cloves to taste lemon juice to taste lemon peel salt and freshly ground black pepper to taste Directions: 1)Break off woody ends of asparagus 2) place in pan for roasting 3) Drizzle oil over 4) sprinkle minced garlic or garlic cloves to your taste on top 5) shake lemon peel on 6) salt and pepper to taste 7) Roast at 400 15-20 min or till desired tenderness. 8) Drizzle w lemon juice to taste Notes: 1) I use 1-2T oil depending on how many servings I want for an R1 meal. If I am eating ALL The asparagus in one meal, it's just 1T of oil. If Keith and I are splitting it or it's for 2 meals, I will add 2T of oil. 2)Based loosely on this recipe and she has some good alternative cooking suggestions/ideas. 3)You could easily add in a chicken breast and bake it with it, for a one pan meal. 4) click the link to the lemon peel in the ingredient list

BBQ Sauce (R1 Approved)

I've actually been making my own bbq sauce for years. The OG recipe can be found here on this blog even ;) all the way from 2010, ha. But I tweaked it to make it R1 Compliant for my Restoration Wellness plan. This actually makes a LOT so I usually half it (Half of this recipe fills almost 2 Primal Kitchen Ketchup bottles, for reference lol) JEN'S BBQ Sauce (R1 Version) 2C Primal Kitchen ketchup 2C Great Value Organic tomato sauce (or use whatever, just needs to be on plan, no sugar etc) 1 1/4C brown sugar truvia or stevia (I do NOT use this much, start with less esp with stevia bc certain ones have more of an aftertaste. I did about 3/4C of it, 1/4C stevia and 1/2C truvia brown sugar) 1 1/4C apple cider vinegar 2T ON PLAN OIL (I Used Plant based ghee which is avocado/coconut blend) 1/2t garlic powder 1/4t chili powder 1t paprika 1/4t ground cinnamon 1/2t cayenne pepper 1t salt 1t fresh ground black pepper ***you could add some liquid smoke ~1T if you like a smo

BBQ Chicken Dinner!

Dinner last night slapped as the kids say 🤣 Been trying to keep it a little more simple this week. Chicken marinated in chiavettas and then finished w homemade bbq sauce. Leftover lemon pepper asparagus and grilled veggies. Yummmm. Eating like this and losing so much weight is insane to me still tbh. Thank you Restoration Wellness ❤️

Lunch Yumminess

Lunch time yesterday!! Kinda like what I had last night but steak instead of turkey burgers. Had about 1/3 of this asparagus and couldn’t even eat all the berries!! Eating like this and down 17lbs in about 20 days on my Restoration Wellness plan!!! 🤯🥳

Weight Loss Challenge: Going Out To Eat

One thing that can be really challenging when you are in weight loss mode is going out to eat. When Keith and I lost almost 300lbs combined about 13 years ago, one thing that we were soooo strict about was eating out, and it really made so much of a difference. We did have a few places that were ok for an emergency, but overall we did not go out to eat for almost a year. The hard things about going out to eat in weight loss mode are this: When one eats out, you want to get the MOST value for your dollar. In weight loss mode, you want LESS portion (or more veggies to volumize) and quality food costs $$. I can make better things to stay on plan at home, so eating out doesn't have a lot of allure bc of that. Also usually when you are doing a weight loss plan, you are investing in it in SOME way. Whether that's a program for support, or certain/specific foods to stay on plan, etc. So if you don't go out to eat, you are saving money and able to put it towards things that help

Keith's Before and Current

Jen's Before and Current

About halfway thru R1 (Phase 1) with my Restoration Wellness plan. Down 17lbs, which is crazy. I don't think I've ever lost more than 10lbs a month before, even when I was over 300lbs and ultimately lost 150lbs. It required a lot of thinking, planning, measuring, weighing, thinking about food all the time and being at the gym EVERY day. This is so much easier. I do want to get back in the gym, but on my time for my own wellness, not as simply a weight loss tool. But because I enjoy moving my body and being active. Completely different mindsets. My pics yet aren't as dramatic as Keith's, even though I've lost a few pounds more than him. But that's ok, enjoying the journey and progress not perfen and all that :) Starting Weight 262.4 Current Weight 245.4 (3 weeks progress)

Hey Bestie Heyyyy

I missed my bestie today so we reunited. I don’t think I’ve ever in my entire life of drinking Starbies almost daily, every had black Coffee from them lol But I put stevia packets and my 3oz of nutpods cookie butter creamer in there (brought it w me w my frothier 😂😂) and it wasn’t like the old days but it felt comfy and warm lol (Ps hey cheekbones heyyyy)

Failure to Plan

It might not look like much (really gotta work on my food photo skills clearly lol) but this is a pic of me staying committed to my Restoration Wellness program, despite having every obstacle and reason NOT to. I planned ahead, brought a salad and fruit for after my show. Our cast went out, and man the burgers looked AMAZING but I had my food, and ate it and focused on the people not the food. There will be a time again when a nice burger will fit into my life/plan but yesterday wasn't that day. I think the biggest challenge of this plan isn't so much the willpower to stay ON plan, but the time management to figure out foods, and stay prepared. Failure to plan is a plan to fail, after all ;)

Doing Hard Things

Doing hard things and having discipline pays off- After my plateau breaker yesterday, I am down 2.2lbs 🎉🎉🎉 That’s a total of 15lbs since freaking September 20th-basically in 2.5 weeks 🤯🤯 Restoration Wellness says 20lbs in 45 days on their program but I have almost hit that in 2 weeks!! It is amazing to me when you actually do a weight loss/wellness program with a professional who understands the body and is seeking to enhance total wellness NOT just weight loss, how the body responds! I have learned more in two weeks about weight loss and wellness and my body than in 30+ years of always trying to lose weight (since I started dieting in 5th grade 😭) and that includes successfully losing 150lbs and keeping most of it off for 10+ years. But this is different and I’m not trying to sound like an ad, but if anyone feels like they’ve been chasing weight loss for far too long, I would absolutely check this program out. Non Scale Victory!

I’m literally the worsttt food photographer ever 😭 But tonight was a struggle bc my cast decided to go out after our show. And get pizza. I had planned to make my dinner post show. It’s hard to eat out in this plan last min. So Keith and I went home, whipped up a fast meal and took it to the bar no shame 😂😂 Zoodles w homemade sauce and turkey meatballs. Note to self: premade and freeze some meals. For situations like this. Big shout out to my amaaazing Restoration Wellness coach Kelly who answered my sos text at 9:30pm. Having a coach is so helpful and makes such a difference.

Creamy Balsamic Chicken and Brussel Sprouts

Another new dinner recipe tonight. Did onions instead of mushrooms. So freaking good and easy to stay on the Restoration Wellness plan 💯💪🏽 Creamy Balsamic Chicken and Brussel Sprouts* 1 Serving Ingredients 5 oz cooked shredded chicken 1/2 C brussel sprouts 1/2 C baby bella mushrooms (I did onions) 1 T primal kitchen mayo 1 T balsamic vinegar 1/4 t Italian seasoning 1/8 t garlic powder 1/4 t kosher salt or to taste fresh ground pepper Instructions In a medium sized frying pan, saute your brussel sprouts (halved) on medium heat for about 5 minutes. Add in your mushrooms (quartered) or onions and cook for about another 4-5 minutes unitl mushrooms are cooked through. Add in your cooked shredded chicken and toss until hot. Take off the heat. In a small bowl, whisk together your mayo, vinegar, and the rest of the seasonings until smooth. Pour out over chicken mixture and toss to coat everything. Week 2!

Week 2 Progress Pics and info from my Restoration Wellness journey. Weight has gone from 262.4 to 249.9 in 2 weeks!!! That's 12.8lbs in 2 weeks, woohoo! In other body changes- My BMI (which is dumb but whatever its another tool) went from 44.9 to 43.1 My Body Fat Percentage went from 53.2% to 48.1% My Body Fat Mass went from 139lbs to 120.8lbs And prob the biggest success is that my viseceral fat went from 17 layers down to 14 layers, which is 3 layers of visceral fat GONE and that's the WORST fat and DANGEROUS fat, so that's freaking AMAZING and huge and shows that I am 1000% in fat burning mode, let's go!! Burning my own fat for energy!!! It's always really hard for me to see changes in pictures, but committing to being present in this journey and not waiting til "the end" or I'm last embarrassed by how much weight I gained back or how fat and whatever I feel.

Sugar Free Caramel Recipe

Trying to make an iced metabolic coffee that works w my Restoration Wellness plan and I came up w this sugar free caramel recipe that Is pretty amazing for my first try!!! (Counts as a fat instead of trying to get oil into iced coffee plain 😣) If you know me you know I’m gonna figure out a way to drink good coffee no matter what I’m doing lol Sugar Free Caramel Recipe https://joyfilledeats.com/sugar-free-caramel-sauce/ But I made it compliant for my plan so coconut milk and plant based ghee and not a whole cup of stevia, just to taste.

Challenges

Prob one of the toughest part of Restoration Wellness program the past two weeks has been time management for meal Prep. So this week my goal is to focus on that. More meal Prep and less coming home so late bc football in Buffalo or bc of being at rehearsal for my shows and having to still make a whole dinner and then eating late. It’s messing w me making sure I’m done eating 3 hours before bed. So even though I have had a hard time w this, I’m still losing weight and doing great on the plan. But it’s important to fine tune things and be 100%!!! Work in progress over here. Meal prepped this morning for lunch and dinner 💪🏽

Wellness Victories!

Another day, another weigh in and down a little over 12 pounds now as I start Day 12, WHATTTTT?!?!? I feel like the weight is just melting off me, literally I have done almost every other weight loss plan out there and NEVER lost weight like this not even low carb/atkins/keto where you usually can lose quite a lot pretty quickly. And even though weight loss is very important to me 🙂 , I am also really excited about many other changes that I've seen in less than two weeks for my overall health. 1) though my heart has been ok, I have been on meds for tachycardia and fluid retention. By mid-day no matter what, my cankles have appeared without fail, and my heart rate has still had some issues being around 117 resting. Since about the first week of the R estoration Wellness program, my heart rate has been in the 80s which is INSANE, and I have not had any fluid retention, my cankles are NOWHERE TO BE SEEN!!! 2)I usually have a hard time getting to sleep and stay up too late, and

Football Food ON PLAN!!

Omggggg dinner was soooo good!!! Made this so we could watch football and miss pizza and wings a lil less lol Buffalo chicken casserole 🤩 So. Darn. Football Challenges Overcome!

Super long night at football (there 3:30-7:30+pm). Plus an hour plus drive there and back. Boys wanted pizza but I made this for me and Keith. Absolutely delish. Added peppers, onions and mushrooms to the chicken. 10/10. Yummm!!! Recipes on Deck!!

Day 10

Ten day update for my Restoration Wellness program: Down almost 11.5lbs 🤯🤯🤯😱😱😱 I kinda like eating the same foods for a while so I’m refraining from boring you all w my turkey meatloaf (as delish as it is) every other day and my eggs every other day (switch out proteins daily). But I will say I made Coconut GROUND BEEF CURRY with Turmeric and I’m bout to be making that w ground Turkey tomorrow so I can eat it every day it’s so good 🤭 And w caulirice 🤗 Pic is a stock photo cuz my food photography sucks and it was so good I ate it too fast forgot to take a pic 😩 Delish though. Eating like this and losing almost 11.5lbs in 10 days. Let’s gooooo!!

Lunch Yumminess

Lunch today was ridiculous. 1) I never eat red meat but started again for this plan and I’m not mad bout it 2) I did not eat all these peppers and onions, but my own reverse psychology is filling up a big plate and saying to myself “you can have this all!” And then not finishing all the veggies. Feels Less like deprivation. Rice caluliower is a current fave. And homemade steak sauce. And a few berries for sweetness. Traders joes grinder spice selection is wonderful. So grateful for it. Day 9 of Restoration Wellness complete!!

Supplements

Another thing I love about Restoration Wellness is that it’s not just about weight loss. It’s truly about restoring wellness-best name ever! I get personalized supplements for specifically what my body needs right now! Not just “do this to lose weight” but “what does your body need for optimal health and wellness?” 🎉🎉🎉 I can't tell y'all the difference it's made how I FEEL.

Day 9 Check In

Good couple of days-I don’t want to bore y’all w my pics every day but sometimes i might 😇 Yesterday was eggs for lunch and turkey meatloaf again for dinner 😍 Todays weigh in has me down 10.2lbs!!! Sesame Chicken Recipe (R1)

Dinner tonight was insane!! Thought I had sesame seeds but didn’t. Still amazing anyway. Restoration Wellness makes losing weight delishhhhh Sesame Chicken* Makes 2 R1 Servings Ingredients Chicken: 10oz chicken thighs or breasts cut into small pieces 1/2 tsp baking soda 1/2 tbsp apple cider vinegar 1/2 tbso braggs amino 1 tsp approved oil or spray Sesame Sauce: 2 tbsp chopped ginger (I used ground ginger or ginger paste) 2 cloves garlic finely chopped (I used minced garlic) Stevia to taste 3 tbsp liquid aminos 3 tbsp apple cider vinegar 2 tbsp tomato paste 1 cup chicken stock 1/2 tsp chili flakes 2 tbsp avocado oil or approved oil 2 tbsp sesame seeds 2 tbsp chopped scallions Directions In a bowl whisk together the aminos, baking soda and apple cider vinegar and then add in the chunks of chicken and stir to ensure that they are all well coated in the liquid. Leave to rest for a few minutes while you prepare the sauce. Heat the 2T oil in a pan on medium hig

Week 1 Weigh In!!

Official Week 1 Weigh in for my Restoration Wellness program… Drumroll please…. Bigger cuz this is big……. Down 9.2lbs my first week!!! Whattttttttt!!!!! That is approx 13% of the total weight I want to lose gone already! Now down to 253.5!!!! Soooo happy w my results not even “just” my weight loss in one week of 9.2lbs. -My body fat % went from 53.2% (😬) to 48.9%!!!! -My visceral fat went down 2 layers!!! -My body water % went up almost 4%!! That’s huge bc I have always had a hard time drinking water. -My physique stayed the same-solidly built aka I’m a thicc girl under it all no matter what 🤣🤣🤣🤣 I love love looooove that I can see all the changes in my body, and not just be motivated by weight!! It’s really encouraging to see I lost a lot of fat this week and my body is in fat burning mode, not “just” water weight! This is not the easiest program but not the hardest program I’ve ever done-but it is without a doubt the only one I’ve ever done that actually connects m

So Different but So Good!

For the first 45 days of my Restoration Wellness plan, i fast thru breakfast. I actually love this bc I’ve never ever been a breakfast person. I can drink metabolic coffee within the first hour that I get up and that’s perfect. It would be far harder/almost Impossible if I had to stop eating by a certain time. The only caveat to my plan for night eating is to be done eating three hours before bedtime. Lunch today looks like this: Three eggs scrambled w coconut oil, leftover veggies from last night and a handful of spinach. Topped w salsa. So so yum!! Thank you Dr. Matthew Boheen for this great program 💪🏽💪🏽

Football Struggles LOL

Lil bit of a harder day food-wise today cuz football 😭😭😭 Boys had our usual football yummies (cheesy chili dip, pizza etc) I ate well today for sure thanks to my Restoration Wellness plan and recipes-and being down over 6lbs in 5 days def makes it easier to stay on plan 🎉🎉 Lunch was spicy beef wraps w riced cauliflower and berries. Dinner was grilled chicken w chiavettas marinade and honey mustard w some garden fresh tomatoes from our neighbor. (Keith is down 4lbs-the first time ever that I’ve lost weight faster than him ☺️)

Spicy Beef Wraps Recipe

This recipe is from Restoration Wellness and one of my FAVES already. I also like I can make it for 3 days! Original recipe with my notes added for my preferences. R1 Compliant Spicy Beef Wraps Ingredients 15 oz. ground beef (makes 3 servings) • 1 tbsp. Bragg Liquid Aminos • 1 tbsp. ginger, peel* • 2 garlic cloves • 1 tsp. black pepper • 1 tsp. pink salt • 2 tbsp. cilantro leaves • 4 iceberg lettuce leaves • 3 tbsp. grapeseed or avocado oil 1. Brown meat in skillet with the oil. Once cooked, add Bragg. 2. Place garlic and ginger into food processor. Pulse until desired consistency. 3. Add the pepper and pink salt when meat is cooked. 4. Add remaining ingredients (from food processor) 5. Cook for another 3 minutes or so to blend the ingredients. 6. Turn off heat and remove from stove, add the cilantro. Mix to combine. 7. Place into bowl. Scoop meat mixture into lettuce and wrap, burrito or taco style. Notes: I added peppers and onions and cook with the beef.

R1 Day 3

Today way intense. I have zero energy for texts or messages or emails. I have about 109 of each after being off the grid teaching for 12 hours lol I will get back to everyone at some point. I am super proud of myself to not only take on this new teaching challenge but to have had such an insane week and start an intense healthy lifestyle plan!! Even though it meant getting up earlier to prep, I did it. Down 4.1lbs so far since Tuesday. That’s awesome! Entered the next phase and it’s more strict and I’m not usually a fan of that tbh but this is so amazing bc I can feel my body responding to it! Anytime I’ve tried fasting or lower calories or foods removed, I can never stick to it tbh. Jenny craig worked for me bc I ate cupcakes every day haha but was that actually healthy?!? I feel wonderful. Not hungry, and not obsessing over food. Truly enjoying whole Foods but also not having to calorie count. I’ve been drinking the most water of my life wo having to pee bc I’m actually hyd

R1 Day 3

Todays weigh in: Down another 1.4lbs from yesterday. So in two days I have lost 4.1bs. Fat? Not sure. But clearly I had a ton of bloating, water retention and inflammation etc and I can’t tell you all how great I feel. I love that I don’t have to count calories!!!!!!!!! Loving this Restoration Wellness journey!!! They say you will lose a min of 20lbs in the first phase of 45 days. I feel like I’m going to lose more lol

Day 2 R1

Ummm down 2.7lbs since yesterday!! WHATTT!! I really already love so many things about this weight loss/wellness program w Restoration Wellness . One thing is weighing myself daily lol Many programs discourage this but I like how it gives me an overall picture instead of a once a week pic. Also I get to text/communicate w my wellness coach daily. Previously I lost 150lbs on Jenny Craig but I had to eat all frozen foods w a lot of chemicals, fillers, etc. Tasted ok but not great. I got to see my coach 1x weekly but honestly most of them never did JC and I knew more than them about weight loss biology etc. I have already learned like 3 new things this week about weight loss that I did not know. And I am clearly not new to the weight loss rodeo lol This is the first time though in my whole life-decades of weight loss-that I feel like I’m pursuing health and wellness. Not just chasing a number on a scale. Pictured: breakfast.

Let's GOOO! Day 1 R1!!!!

First day of my program at Restoration Wellness is complete. I worked nonstop for about 14 hours todaty but still managed to prioritize myself and my health. I have struggled to do this consistently since covid when attempting to lose weight and regain my health by myself. Today I texted multiple times w my wellness coach, got support and encouragement, and also had so many tools to set me up for success. It was literally the worst day I can imagine to start an intensive weight loss program but it didn’t feel very hard at all. I also wasn’t hungry at all!!! So shocked. I’m usually starving when in weight loss mode at least the first few weeks. I didn’t even have to count calories or anything either which is my least fave thing. Tried two new recipes that were so good-spinach pesto chicken and spicy beef roll ups.

Not Before...Just the Present

You know, despite having lost 150lbs previously (kept most of it off for 10+ years, but my last baby and Covid combined to my having about 70lbs more than I want to have back on), and having our before pics shown every where on national media, international magazine covers and media, all over the internet etc...this feels different. It feels different because I have NEVER EVER shared a before picture until I had an AFTER picture. Or a before weight. And once you have the AFTER picture, the before picture doesn't seem so bad, right? Because it's not current. It's not present, it's not reality. It's a BEFORE. Not a NOW. Not an AFTER. But I'm at a different place now, where I want my whole journey this time to just be present and authentic even in the uncomfortable places. So here's my CURRENT pic. And my CURRENT weight. Nothing else, just that. Just me, in this moment, being present and loving myself in this body, even if it's not the healthies

Restoring our Wellness

So FREAKING excited-had our intake/launch meeting with Restoration Wellness today and tomorrow starts Day 1 of an intense program but when Keith and I both need so bad!!! Did some meal prep shopping yesterday after our first session w our health coaches. It's like the worst possible time to really try to priortize ourselves for weight loss/wellness, with a 6 show run at Fringe opening this week (3 days, 2 back to back shows daily!!) and in general life. But then again when is a good time? January 1st? Some random Monday? Been there, done all of that. And really the only worst time is the time you aren't willing to make yourself a priority. Regardless of what else is going on in your life. That’s kinda been my problem since Covid tbh. Always some reason to prioritize something over my health. So here’s to this first 45 day phase and getting back to my best and healthiest self. I am excited to share, document and be fully present in this season of my life, with myself body,
