Lemon Garlic Asparagus

Lemon Garlic Asparagus* Ingredients: 1 bunch asparagus washed and 2 tablespoons R1 approved oil** minced garlic or cloves to taste lemon juice to taste lemon peel salt and freshly ground black pepper to taste Directions: 1)Break off woody ends of asparagus 2) place in pan for roasting 3) Drizzle oil over 4) sprinkle minced garlic or garlic cloves to your taste on top 5) shake lemon peel on 6) salt and pepper to taste 7) Roast at 400 15-20 min or till desired tenderness. 8) Drizzle w lemon juice to taste Notes: 1) I use 1-2T oil depending on how many servings I want for an R1 meal. If I am eating ALL The asparagus in one meal, it's just 1T of oil. If Keith and I are splitting it or it's for 2 meals, I will add 2T of oil. 2)Based loosely on this recipe and she has some good alternative cooking suggestions/ideas. 3)You could easily add in a chicken breast and bake it with it, for a one pan meal. 4) click the link to the lemon peel in the ingredient list

BBQ Sauce (R1 Approved)

I've actually been making my own bbq sauce for years. The OG recipe can be found here on this blog even ;) all the way from 2010, ha. But I tweaked it to make it R1 Compliant for my Restoration Wellness plan. This actually makes a LOT so I usually half it (Half of this recipe fills almost 2 Primal Kitchen Ketchup bottles, for reference lol) JEN'S BBQ Sauce (R1 Version) 2C Primal Kitchen ketchup 2C Great Value Organic tomato sauce (or use whatever, just needs to be on plan, no sugar etc) 1 1/4C brown sugar truvia or stevia (I do NOT use this much, start with less esp with stevia bc certain ones have more of an aftertaste. I did about 3/4C of it, 1/4C stevia and 1/2C truvia brown sugar) 1 1/4C apple cider vinegar 2T ON PLAN OIL (I Used Plant based ghee which is avocado/coconut blend) 1/2t garlic powder 1/4t chili powder 1t paprika 1/4t ground cinnamon 1/2t cayenne pepper 1t salt 1t fresh ground black pepper ***you could add some liquid smoke ~1T if you like a smo

BBQ Chicken Dinner!

Dinner last night slapped as the kids say 🤣 Been trying to keep it a little more simple this week. Chicken marinated in chiavettas and then finished w homemade bbq sauce. Leftover lemon pepper asparagus and grilled veggies. Yummmm. Eating like this and losing so much weight is insane to me still tbh. Thank you Restoration Wellness ❤️

Lunch Yumminess

Lunch time yesterday!! Kinda like what I had last night but steak instead of turkey burgers. Had about 1/3 of this asparagus and couldn’t even eat all the berries!! Eating like this and down 17lbs in about 20 days on my Restoration Wellness plan!!! 🤯🥳

Weight Loss Challenge: Going Out To Eat

One thing that can be really challenging when you are in weight loss mode is going out to eat. When Keith and I lost almost 300lbs combined about 13 years ago, one thing that we were soooo strict about was eating out, and it really made so much of a difference. We did have a few places that were ok for an emergency, but overall we did not go out to eat for almost a year. The hard things about going out to eat in weight loss mode are this: When one eats out, you want to get the MOST value for your dollar. In weight loss mode, you want LESS portion (or more veggies to volumize) and quality food costs $$. I can make better things to stay on plan at home, so eating out doesn't have a lot of allure bc of that. Also usually when you are doing a weight loss plan, you are investing in it in SOME way. Whether that's a program for support, or certain/specific foods to stay on plan, etc. So if you don't go out to eat, you are saving money and able to put it towards things that help

Jen's Before and Current

About halfway thru R1 (Phase 1) with my Restoration Wellness plan. Down 17lbs, which is crazy. I don't think I've ever lost more than 10lbs a month before, even when I was over 300lbs and ultimately lost 150lbs. It required a lot of thinking, planning, measuring, weighing, thinking about food all the time and being at the gym EVERY day. This is so much easier. I do want to get back in the gym, but on my time for my own wellness, not as simply a weight loss tool. But because I enjoy moving my body and being active. Completely different mindsets. My pics yet aren't as dramatic as Keith's, even though I've lost a few pounds more than him. But that's ok, enjoying the journey and progress not perfen and all that :) Starting Weight 262.4 Current Weight 245.4 (3 weeks progress)

Hey Bestie Heyyyy

I missed my bestie today so we reunited. I don’t think I’ve ever in my entire life of drinking Starbies almost daily, every had black Coffee from them lol But I put stevia packets and my 3oz of nutpods cookie butter creamer in there (brought it w me w my frothier 😂😂) and it wasn’t like the old days but it felt comfy and warm lol (Ps hey cheekbones heyyyy)

Failure to Plan

It might not look like much (really gotta work on my food photo skills clearly lol) but this is a pic of me staying committed to my Restoration Wellness program, despite having every obstacle and reason NOT to. I planned ahead, brought a salad and fruit for after my show. Our cast went out, and man the burgers looked AMAZING but I had my food, and ate it and focused on the people not the food. There will be a time again when a nice burger will fit into my life/plan but yesterday wasn't that day. I think the biggest challenge of this plan isn't so much the willpower to stay ON plan, but the time management to figure out foods, and stay prepared. Failure to plan is a plan to fail, after all ;)

Doing Hard Things

Doing hard things and having discipline pays off- After my plateau breaker yesterday, I am down 2.2lbs 🎉🎉🎉 That’s a total of 15lbs since freaking September 20th-basically in 2.5 weeks 🤯🤯 Restoration Wellness says 20lbs in 45 days on their program but I have almost hit that in 2 weeks!! It is amazing to me when you actually do a weight loss/wellness program with a professional who understands the body and is seeking to enhance total wellness NOT just weight loss, how the body responds! I have learned more in two weeks about weight loss and wellness and my body than in 30+ years of always trying to lose weight (since I started dieting in 5th grade 😭) and that includes successfully losing 150lbs and keeping most of it off for 10+ years. But this is different and I’m not trying to sound like an ad, but if anyone feels like they’ve been chasing weight loss for far too long, I would absolutely check this program out. Non Scale Victory!

I’m literally the worsttt food photographer ever 😭 But tonight was a struggle bc my cast decided to go out after our show. And get pizza. I had planned to make my dinner post show. It’s hard to eat out in this plan last min. So Keith and I went home, whipped up a fast meal and took it to the bar no shame 😂😂 Zoodles w homemade sauce and turkey meatballs. Note to self: premade and freeze some meals. For situations like this. Big shout out to my amaaazing Restoration Wellness coach Kelly who answered my sos text at 9:30pm. Having a coach is so helpful and makes such a difference.

Heyyyyy You Guysssss

Long, LONG LONG time no post. blogging has def gone by the wayside. I used to blog crazy back in the day, on livejournal, and then switched over here to blogspot for diet/recipe specific things. I still like the name of the blog here, LOL, so I'm back to share and keep all my recipes and stuff in one spot, if only for me ;) Follow along if you want, I always enjoy the company ;) JEN

Creamy Balsamic Chicken and Brussel Sprouts

Another new dinner recipe tonight. Did onions instead of mushrooms. So freaking good and easy to stay on the Restoration Wellness plan 💯💪🏽 Creamy Balsamic Chicken and Brussel Sprouts* 1 Serving Ingredients 5 oz cooked shredded chicken 1/2 C brussel sprouts 1/2 C baby bella mushrooms (I did onions) 1 T primal kitchen mayo 1 T balsamic vinegar 1/4 t Italian seasoning 1/8 t garlic powder 1/4 t kosher salt or to taste fresh ground pepper Instructions In a medium sized frying pan, saute your brussel sprouts (halved) on medium heat for about 5 minutes. Add in your mushrooms (quartered) or onions and cook for about another 4-5 minutes unitl mushrooms are cooked through. Add in your cooked shredded chicken and toss until hot. Take off the heat. In a small bowl, whisk together your mayo, vinegar, and the rest of the seasonings until smooth. Pour out over chicken mixture and toss to coat everything. Week 2!

Week 2 Progress Pics and info from my Restoration Wellness journey. Weight has gone from 262.4 to 249.9 in 2 weeks!!! That's 12.8lbs in 2 weeks, woohoo! In other body changes- My BMI (which is dumb but whatever its another tool) went from 44.9 to 43.1 My Body Fat Percentage went from 53.2% to 48.1% My Body Fat Mass went from 139lbs to 120.8lbs And prob the biggest success is that my viseceral fat went from 17 layers down to 14 layers, which is 3 layers of visceral fat GONE and that's the WORST fat and DANGEROUS fat, so that's freaking AMAZING and huge and shows that I am 1000% in fat burning mode, let's go!! Burning my own fat for energy!!! It's always really hard for me to see changes in pictures, but committing to being present in this journey and not waiting til "the end" or I'm last embarrassed by how much weight I gained back or how fat and whatever I feel.

Sugar Free Caramel Recipe

Trying to make an iced metabolic coffee that works w my Restoration Wellness plan and I came up w this sugar free caramel recipe that Is pretty amazing for my first try!!! (Counts as a fat instead of trying to get oil into iced coffee plain 😣) If you know me you know I’m gonna figure out a way to drink good coffee no matter what I’m doing lol Sugar Free Caramel Recipe https://joyfilledeats.com/sugar-free-caramel-sauce/ But I made it compliant for my plan so coconut milk and plant based ghee and not a whole cup of stevia, just to taste.

Challenges

Prob one of the toughest part of Restoration Wellness program the past two weeks has been time management for meal Prep. So this week my goal is to focus on that. More meal Prep and less coming home so late bc football in Buffalo or bc of being at rehearsal for my shows and having to still make a whole dinner and then eating late. It’s messing w me making sure I’m done eating 3 hours before bed. So even though I have had a hard time w this, I’m still losing weight and doing great on the plan. But it’s important to fine tune things and be 100%!!! Work in progress over here. Meal prepped this morning for lunch and dinner 💪🏽

Wellness Victories!

Another day, another weigh in and down a little over 12 pounds now as I start Day 12, WHATTTTT?!?!? I feel like the weight is just melting off me, literally I have done almost every other weight loss plan out there and NEVER lost weight like this not even low carb/atkins/keto where you usually can lose quite a lot pretty quickly. And even though weight loss is very important to me 🙂 , I am also really excited about many other changes that I've seen in less than two weeks for my overall health. 1) though my heart has been ok, I have been on meds for tachycardia and fluid retention. By mid-day no matter what, my cankles have appeared without fail, and my heart rate has still had some issues being around 117 resting. Since about the first week of the R estoration Wellness program, my heart rate has been in the 80s which is INSANE, and I have not had any fluid retention, my cankles are NOWHERE TO BE SEEN!!! 2)I usually have a hard time getting to sleep and stay up too late, and

Football Food ON PLAN!!

Omggggg dinner was soooo good!!! Made this so we could watch football and miss pizza and wings a lil less lol Buffalo chicken casserole 🤩 So. Darn.
