Maple Coffee Frosting


So I decided to try out TPW's Maple coffee frosting, and OMG. OMMMMGGG.

Just wow. On the cinnamon rolls, that is. INSANE.

Now I will say that I didn't make this whole recipe, b/c her cinnamon roll recipe has like 8C of flour, ie makes a TON, lol, and my bitty bread machine didn't make that many.

I was going to halve it, but I was unsure on the whole "bag of powdered sugar" thing, 16oz (half my bag) seemed like a LOT of powdered sugar, so I just halved everything else, and added powdered sugar til I got a thick but pourable consistancy and it tasted good ;) Sorry, I didn't measure, just poured. You really can't mess it up though.

TPW's Maple Coffee Frosting

1 bag of powdered sugar
2 teaspoons maple flavoring (didn't have this, just used maple syrup)
1/2 cup milk (i used cream)
1/4 cup melted butter
1/4 cup of brewed coffee (i used espresso)
Also add 1/8 teaspoon (a generous pinch) salt.

mix it up and pour it all over cinnamon rolls that are still warm. or cake, cookies, or just pour it in your mouth. whatever ;)

  1. I have been eyeing TPW's recipe for quite some time. I'm with you in not wanting 7 pans of rolls but the frosting recipe I can't pass up. (Maybe I'll do the whole recipe if I ever need to feed a room full of people). I've been wondering about a "bag of powdered sugar" too and trying to figure out what size bag she's referring too. I'm so glad I came across your post, I was nervous about halving it and winging it but I'll go for it since it worked for you! Thanks for the confidence boost! :)

Product Review

Keith and I made a pact awhile ago to try new things. Every week we attempt to try one new thing we have previously never had, or been scared to try or whatever. And it's been awesome, we've been enjoying so many things that we've been missing out on, and Mairi of course loves anything LOL so she benefits from it as well. A few weeks ago while grocery shopping, I spotted this jar of Tikka Masala. I was like, hmm, that looks good and healthy and nice to have for the times I don't want to cook or whatever. I grabbed it, bought and promptly threw it in the back of my cupboard. Keith busted it out tonight, and made a FABULOUS chicken and quinoa dish (we are obsessed with quinoa, did you know it's like BREASTMILK? and you all know how i feel about that :P It's a complete protein with an essential amino acid balance close to breastmilk!) and wow. Sweet Oatmeal Bread

So far this has been a favorite, it was a very nice bread overall. We enjoy adding a lot of flax and wheat germ and other randomness (seeds, nuts, etc) to our breads, and I don't have any specific measurements for those, just add as you like. Sweet Oatmeal Bread (1.5lb loaf) 1/2C old-fashioned rolled oats 3/4-7/8C water 2T molasses 1T sugar 1t salt 2C bread flour 1 1/2t active dry yeast Place all ingredients in bread pan, using the least amount of liquid listed in the recipe. Select LIGHT CRUST setting Press Start Observe the dough as it kneads. After 5 to 10 minutes, if it appears dry and stiff or if your machine sounds as if it's straining to knead it, add more liquid 1 tablespoon at a time until the dough forms a smooth, soft, pliable ball that is slightly tacky to the touch. ***I used delayed timer on this, and the min amount of water, and it turned out fine. I also liked the light crust a lot, it was a good change from the med crusts I have been doing***

Challenges

Prob one of the toughest part of Restoration Wellness program the past two weeks has been time management for meal Prep. So this week my goal is to focus on that. More meal Prep and less coming home so late bc football in Buffalo or bc of being at rehearsal for my shows and having to still make a whole dinner and then eating late. It’s messing w me making sure I’m done eating 3 hours before bed. So even though I have had a hard time w this, I’m still losing weight and doing great on the plan. But it’s important to fine tune things and be 100%!!! Work in progress over here. Meal prepped this morning for lunch and dinner 💪🏽
