Mexican Wedding cake

Now, I will say this first and foremost.

I hate this cake. I think it's disgusting.

So does my BIL. He refers to it as the Mexican Funeral Cake, bwahaha.

Now my other BIL loves it. Keith LOVES it. My gram makes this all the time, it's her recipe, and my other cousins adore it too.

Me, not so much. The frosting is delish though.

So take that for what it's worth, if you make it, lmk if you think it's more fit for a wedding or a funeral ;)

Mexican Wedding Cake

2C flour

2C sugar

1t baking soda

1t baking powder

1/2C chopped nuts

2 eggs

1 can crushed pineapple with juice (20oz i think?)

preheat oven 350

grease 13x9 pan

mix all together

bake ~35m

Frosting

8oz cream cheese

1t vanilla

1/2C butter

2C powdered sugar

optional

1C coconut

1/2 cup chopped pecans

Keith and I made a pact awhile ago to try new things. Every week we attempt to try one new thing we have previously never had, or been scared to try or whatever. And it's been awesome, we've been enjoying so many things that we've been missing out on, and Mairi of course loves anything LOL so she benefits from it as well. A few weeks ago while grocery shopping, I spotted this jar of Tikka Masala. I was like, hmm, that looks good and healthy and nice to have for the times I don't want to cook or whatever. I grabbed it, bought and promptly threw it in the back of my cupboard. Keith busted it out tonight, and made a FABULOUS chicken and quinoa dish (we are obsessed with quinoa, did you know it's like BREASTMILK? and you all know how i feel about that :P It's a complete protein with an essential amino acid balance close to breastmilk!) and wow. Here we go again...

Trying something new. Hijacked my recipe blog to post my thoughts about round 5829 of weight loss. I feel like I wanted a new space, and I love LJ, and might cross-post or whatever, but I want to blog daily about my journey just in this. This is different this time, and yet it's the same old same old, at the same time. What? But it is. And it isn't. And I am frustrated, and annoyed, but finally to the point of moving forward, which is always good. Here's the thing. I gained a little over 50lbs with my pregnancy with Lachlan. Before that, I had gained about 20lbs, trying to figure out what I wanted to weigh, where I liked what I looked like, and basically just get my head not so effed up when it comes to food addiction. So really, ultimately, by the end of my pregnancy with Lachlan, in March 2012, I was up about 70lbs from my absolutely lowest ever of 145lbs. Another Job!!!

I decided recently that while I adore teaching and training hooping, the passion for me lies in HOOPING, not in being a FITNESS instructor, kwim? So I have been reevaluating what that means for me/our business etc. I decided I wanted to focus more on the nutrition component for the morbidly obese/those just changing their lifestyles to prioritize healthy eating for the long term. I have many things already in place, as this has been on my heart since I changed my lifestyle-I am in my junior year of completing my degree in Exercise Science with a specialty in nutrition. I am SafeServ certified. I am a certified Nutrition and Wellness Consultant. So on and so forth. Once I decided this (literally last week, I finally just accepted this was on my heart, even though it feels scary, this "unknown"-I know how to be a fitness instructor after almost 4 years!!).
